Like me!
The smell of certain greens always takes me back to those times as a small kid π₯² And now, as a big kid, I am trying to fix my aversions for SOME veggies (sorry, but mushrooms can eff off π)
Here are some yummy recipes that are packed with vegetable goodness, cheap, and so easy to prepare π₯.
Please beware, I measure with my heart, so I’ve done my best to put it all out for you π .
Tomato, red pepper, cauliflower (and other vegetables) pasta.
Lightly roasting the veggies adds so much flavour. And blitzing it all together with some of the starchy pasta water makes for a smooth and delightful sauce.
π΄ Start by preheating your oven or airfryer to 200C.
π΄ Place your vegetables on a baking tray: whole red bell peppers, halved tomatoes, washed and halved carrots, cauliflower florets, and two garlic bulbs* with the tops cut off. Cut an onion into quarters. *Wrap your garlic in some foil to prevent it from burning before the veggies have time to cook.π§ π§πΆπ
π΄ Season your vegetables with salt and pepper, paprika, chilli flakes and dried herbs. Rub your spices all over the veggies with some oil.π§
π΄ Roast your vegetables until tender (approx. 15-30 mins) The bell peppers and tomatoes will char slightly, this is great roasty flavour! *This step also goes very quick in the airfryer, making this an easy weeknight meal!
π΄ Cook your pasta of choice in salted boiling water. Reserve some of the pasta water when draining the pasta.
π΄ Remove your veggies from the oven. Remove the garlic from their foil casings, and squeeze the soft garlic cloves on the vegetables. While piping hot (π₯) place the veggies into a:
- Big pot. And blend it all together with an immersion stick blender, adding some of the reserved pasta water for your desired consistency.
- Or…into a food processor/stand blender. And blitz everything, with some of the starchy pasta water until you reach your desired consistency.
π΄ Add mixture to a pot, turn the heat onto a medium flame and check for seasonings…is it salty enough? Does it need a bit of sugar?
π΄ You can totally amp up the creamy factor with some cream or coconut cream. Or you can add in some cheese! Combine with sauce with the pasta or serve separately. π
And how do you like that!? It’s a tomato sauce pasta with added veggies and yumminess!
